Butterscotch Drop Cookies: Kids in the Kitchen

Admittedly I am WAY behind on this series…if you’re wondering why, here are the “gory” details. Thankfully, my gal pals are incredibly supportive. And patient. As I continue playing catch up and getting back on the horse, I am sharing a super tasty, crazy easy recipe for Butterscotch Drop Cookies for the Kids in the Kitchen dessert challenge. Emily cooked these up all by herself and the best part about this recipe is that it is the easiest, most basic drop cookie recipe ever, you almost always have the ingredients on hand, and you can switch up what type of goody you put in them. We’ve done chocolate chips, walnuts, mint chocolate chips, etc. The reigning favorite continues to be butterscotch, and even I can’t keep my hands off these as a professed hater of butterscotch in all other circumstances.

Butterscotch Drop Cookies | Easy Family-Friendly Recipes

What You’ll Need: 

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 cup goodies

  • Preheat the oven to 350 degrees.
  • Cream the sugar and butter together.
  • Add egg and vanilla and mix well.
  • Add flour and mix some more.
  • Fold in goodies.
  • Place rounded spoonfuls about 2 inches apart on greased cookie sheet.
  • Bake for 10-12 minutes.

NOTE: This particular batch we went crazy on the butterscotch morsels and cooked them a bit longer than usual, so they’re a bit chunkier and darker. These butterscotch drop cookies can appear “white” and look undone when checking in on the baking progress. Don’t overcook! That’s totally normal. Keep an eye on the BOTTOMS of the cookies to determine readiness.
