Seriously, I’m in awe of her. Somer partners with me to run The Studio Hampton Roads and Modern Femme, parents three small kids (one a newborn!) all day at home AND cooks crazy delicious, healthy meals for her family…she is super woman. I don’t know how she does it. We’re up for another tasty treat today that has me STARVING!
With strawberries still in season, I could NOT resist sharing one of my favorite strawberry, avocado and grilled chicken recipes. Having made my share of strawberry muffins, bread and margaritas with our bounty from berry picking at our local organic berry patch, Cullipher Farm, I knew I needed some healthier options.

I found this recipe several years ago from my subscription with Fitness Magazine. It’s only 217 calories, 27g Protein, 8g Carbs and 9g Fat…What isn’t there to love?!
Grilled Chili-Lime Chicken with Strawberry Avocado Salsa (The title alone gets me drooling!)
3 tbsp of fresh lime juice
1 tbsp grapeseed oil (or any mild-flavored oil)
1 tbsp honey
1 large garlic clove, minced
1 1/4 tsp chili powder, divided
½ tsp sea salt
4 boneless, skinless chicken breast
8 large strawberries, hulled and diced (I use about 12) ☺
½ avocado, pitted, peeled and diced
*NOTE* Pick the little stem of an avocado and if it’s green, it’s perfect. If it’s brown, some or all of the inside will be brown too.
1 medium white onion, diced (I use red)
1 tbsp finely chopped fresh cilantro
In a bowl, whisk together 2 tbsp of lime juice, oil, honey, garlic, 1 tsp chili powder and salt.
Pour the mixture into a large re-sealable bag; add chicken breasts; seal and shake to coat the chicken.
Put the bag in a shallow container in the refrigerator. ** Chill 4 hours or overnight ** turning the bag occasionally.
Remove chicken from marinade and discard the excess juices.
Grill chicken for 12 minutes, turning once or until the meat thermometer reaches 170 degrees.
Transfer to clean plate and let stand for 5 minutes before slicing.
While you’re waiting, let’s make the salsa!
In a bowl, toss together the strawberries, avocado, onion, cilantro, the remaining lime juice and chili powder.
