Apple Vanilla Pancakes by Weelicious: Somer Cooks

By now you all know my go-to, gal pal and small biz partner from The Studio Hampton Roads, Somer Anne. She’s the fab photog behind many of my posts. What I haven’t mentioned previously is that she is also a Mama to three kiddos, staying at home to care for them while also running the marketing and branding side of our business in her very sporadic, hot shot moments of peace and quiet. She’s a rock star and beyond being a perfect fit for a professional partnership, she is one of my most trusted friends and a source of constant support and encouragement that I couldn’t live without.

I thought it might be nice for her to hop on here now and again to share some little tips and tricks that she’s come across in her family life, especially since she actually, you know, cooks and stuff. Which I rarely get to do these days. Without further ado, let’s give her a warm hello and bask in the yummy that is her first discovery: Apple Vanilla Pancakes by Weelicious.

Trying to put together a breakfast that my entire family will enjoy sometimes proves to be challenging to say the least.  When I came across this recipe by Weelicious, those problems ended.  The new problem I had was that a single recipe did not last long enough.  The girls love them, but my husband can rarely wait for them to get on a plate.  He often steals one as if they are cookies I am about to put away until after dinner.  To say they are a hit would be an understatement!

Ingredients:
1 cup finely chopped apples (I use Gala)
1/2 tsp cinnamon (or a tad more) :)
1 packed tbsp brown sugar
1 1/3 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
2 tbsp vegetable oil (I substitute Coconut Oil here)
1 1/4 cups buttermilk
2 large eggs
1 tsp pure vanilla extract (or a tad more) :)
I serve it with honey, but you could definitely eat these babies without a thing added to them!

Instructions:
Combine the apple, cinnamon and brown sugar in one bowl.
Combine the flour, baking powder and salt in another bowl.
Combine and whisk together the oil, buttermilk and eggs.
Add the vanilla to the buttermilk mixture.
Slowly add the flour mixture to the buttermilk mixture until just combined. (Do not over stir it.)
Fold the apple mixture into the batter.
Heat griddle.
Pour approx 2-3 tbsp of batter onto the griddle, cook each side approx 3-4 minutes until golden brown.
Serve.

These can be frozen and kept up to 3 months. 
Summary:
My whole family loves these!  I highly suggest making a double batch as they are perfect for busy mornings.  Just take out of the freezer, pop into the toaster and enjoy!

    Loved these! I was easily able to adapt for a vegan household subbing applesauce for the eggs and rice milk for the whole milk. Halved the salt and sugar (these were for an 11 month old). They were fluffy, sweet, and devoured!

    I don’t get it.Why pre-mesure all this stuff and then store it. Now you are not only storing all of the idnuvidial parts, but the mix as well.Almost every Saturday or Sunday is pancake or waffle day. When I do it, it from scratch, and if I mix it by myself, it takes about 7 to 10 minutes of prep time. Normally I do it with my kid, who starting mixing the batter with me when he was 4.5, now he is 6. With his help, we still only have about 15 minutes of prep time, plus the advantages cooking skills, math skills, dad/son time to go along with it.I would lose a lot of that by having a pre-mix.I suggest that more people involve their kids in the kitchen. Teach them young, and teach them well, and maybe we won’t have fat unhealthy kids who only eat out.

    Etonnantes stats en effet !J’ai pris le match à 4/3 dans le 3ème set, je pense que jusque là RG avait été plutôt en contrôle. Il fait un jeu calamiteux à 4/4 avec des services très mous que Matosevic retourne comme dans du beurre et c’est donc là qu’il perd son service pour la 1ère fois. Heureusement à 4/5 il fait un jeu de retour excellent comme je l’ai déjà écrit.C’est le tie-break final que Gasquet peut vraiment se reprocher, car il laisse clairement Matosevic prendre le leadership dans l’échange.

    We used to go “guising” in Scotland too, Robert, and also for money in pubs and on the buses. Didn’t get spent on the pool tables though – went towards buying fireworks for November 5th (Guy Fawkes and bonfires for those who might not know). Dooking for apples in Scotland (not bobbing) and eating treacle scones, not donuts, dangling from string were also common(and messy)events. Not into the “trick or treat” crap here but maybe I’m just too old! It was around 50 years ago after all!
